Holiday Quinoa Stuffing Recipe
Ingredients:
1 cup quinoa (rinsed)
2 cups vegetable or chicken broth
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup diced celery
1 cup diced carrots
1 apple, diced (Granny Smith works great!) 🍏
½ cup dried cranberries (unsweetened preferred)
½ cup chopped walnuts or pecans
1 tsp dried thyme
1 tsp dried sage
Salt and pepper to taste
Optional: 2 tbsp chopped fresh parsley for garnish
Instructions:
Cook the Quinoa:
In a medium saucepan, combine quinoa and broth. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes, or until quinoa is fluffy and liquid is absorbed. Set aside.
Sauté the Veggies:
Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking until fragrant (about 2 minutes). Add celery, carrots, and apple, and sauté until softened (about 5-7 minutes).
Combine Ingredients:
In the skillet, add cooked quinoa, dried cranberries, nuts, thyme, sage, salt, and pepper. Stir well to combine and heat through for another 3-5 minutes.
Serve or Stuff:
Serve as a side dish, or use it as stuffing for a roasted turkey, chicken, or even bell peppers! 🌟
